Semur Ayam

Hello! I created this recipe posting because my friend, Kate, a good friend of mine frequently asked me how to cook Indonesian dishes. We met each other during one of surgery workshop in France. During that cold moment and feeling tired after work in our lab, we went to Indonesia restaurant and she fell in love with the food ever since. I never actually type my recipes until she asked me to email her, then I realized I already collect more than 20 recipes!!
Anyway, I decide to archive these recipes here in this little blog. Most of the recipes is from my family, some experiment from internet etc. Please link back to me if you want to use my recipes in your blog. My photography skill is sort of limited and perhaps you would find my English is not that well-understood, but I still use original bahasa Indonesia terms in the recipes. Enjoy!

SEMUR AYAM
Chicken in sweet soy marinade
Semur ayam is chicken dish, stews with soy sauce, nutmeg and other condiments that creates a deep and bold taste. Use free range chicken (ayam kampung) if you can as it would taste best. Do not use refrigerated/ pre-cut chicken that you find in supermarket as I think the flavor would not be as rich. Vegetables (usually potatoes) can be added during the stew and add extra chunks of starchy flavor. This is a relatively easy Indonesia dishes, and surely a delicious one.

Cook time: 30-45 minutes
Servings: 4-5
Total cooking time: 1 hour

Ingredients:
800 kg chicken, about 8-10 pieces
1 medium sized tomato, cut to cubes
1 small sized onion, cut thin

Grind this condiments into paste:
3 garlic (bawang putih)
5 shallots (bawang merah)
3 candlenut (kediri)
1 nutmeg

6 tablespoon sweet soy sauce (kecap manis)
4 tablespoon mushroom sauce
700 ml water
1 tsp pepper (lada putih)
10 dried cloves flower
1/4 tsp salt


Instructions
1 Heat oil in pan with medium heat. Sautee grinded condiments about 2-3 minutes until fragrant. Add pepper and cloves.
2 Add onion and tomato. Stir until softened.
3 Add chicken, water, swert soy sauce and mushroom sauce. Mix well and let it boil. Cover the pan with lid then turn down then the heat and let it simmer for 20 minutes.
4 After 20 minutes, add salt then adjust the flavor. Afterward, add potato wedges. Cover the the pan again for 10-15 minutes until potatoes is softened.
5 Turn down the heat. Transfer to serving plate and garnish with a sprinkle og fried shallots (bawang goreng).
